The best way to make Nut Roast with Squash, Quinoa, Chestnuts & Spiced Tomato Sauce

This recipe comes from Jamie Oliver's Christmas Cookbook (Penguin Books), though Nut Roasts do not have to simply for the festive interval! Nigel has chosen this recipe because the Spicy Tomato Sauce offers the dish a pleasant kick.

Serves: 8

Prep and cooking time: 1hr 45 min

Components for Nut Roast with Squash, Quinoa, Chestnuts & Spiced Tomato Sauce

olive oil

100g quinoa

500g butternut squash

2 onions

2 sticks of celery

200g vac-packed chestnuts

2 sprigs of contemporary rosemary

1 teaspoon candy smoked paprika

1 teaspoon dried oregano

2 massive subject mushrooms

1 lemon

60g contemporary breadcrumbs

120g dried apricots

150g combined unsalted nuts

4 massive eggs

40g mature Cheddar cheese

For the Spiced Tomato Sauce

3 contemporary crimson chillies

1 stick of cinnamon

2 cloves of garlic

½ a bunch of contemporary thyme (15g)

2 massive peeled roasted crimson peppers

2 x 400g tins of plum tomatoes

1 tablespoon balsamic vinegar

The best way to prepare dinner Nut Roast with Squash, Quinoa, Chestnuts & Spiced Tomato Sauce

Preheat the oven to 180oC/350oF/gasoline 4. Scrunch up a moist sheet of greaseproof paper, then use it to line all sides of an oiled 1.5 litre loaf tin, leaving a little bit of overhang on the ends that can assist you elevate out your nut roast later.

Cook dinner the quinoa in accordance with the packet directions, drain, tip right into a mixing bowl and depart to chill. Drain, chop and add the peppers, pour within the tinned tomatoes and 1 tin’s value of water, breaking apart the tomatoes with a picket spoon, then add the balsamic and a pinch of salt. Carry to the boil, then simmer for 20 minutes, or till thickened and diminished, stirring often.

Elevate the nut roast out of its tin and sit it within the sauce, discarding the paper. Grate over the cheese, pop a chilli on prime with the remaining thyme sprigs and drizzle with a bit of oil. Return the opposite chillies and cinnamon to the sauce. Roast for a ultimate quarter-hour, then depart to take a seat for five minutes. Finely chop and stir as a lot of the chilli as you want into the sauce, slice up the nut roast and tuck in.
