Fish Pie

This recipe known as Hugh's Mum's Fish Pie and comes from The River Cottage Fish E book (Bloomsbury) by Hugh Fearnley-Whittingstall and Nick Fisher.

This can be a traditional, creamy, comforting pie, which ought to delight fish eaters of all ages. The fundamental precept is to have some smoked fish, some white fish, some oily fish and a few prawns. However, after all, you may range the species based on what’s out there – and good worth – on the day.

Serves: 6

Components

FOR THE FILLING:

400g cooked, shell-on Atlantic prawns

500g smoked white fish fillets, equivalent to pollack or haddock

300-400g recent white fish fillets

300-400g natural salmon fillets

1 onion, roughly chopped

1 giant carrot, roughly chopped

1 celery stick, chopped

1 bay leaf

A couple of peppercorns

1 bunch flat-leaf parsley, leaves chopped and stalks reserved

About 750ml complete milk

3 giant eggs, at room temperature

50g butter

75g plain flour

2 tbsp chopped chives

Salt and floor black pepper

FOR THE MASH:

1kg floury potatoes, equivalent to Maris Piper or Désirée, peeled and reduce up

50g butter, plus additional to dot on high of the pie

100ml complete milk, warmed

Methodology

Shell the prawns and put the shells and heads in a saucepan: they'll assist to flavour the sauce for the pie. With a pointy filleting knife, pores and skin the fish (or get the fishmonger to do that, and ask to maintain the pores and skin). Add the skins to the saucepan, plus the onion, carrot, celery, bay leaf, peppercorns and parsley stalks. Pour sufficient milk simply to cowl, convey to a simmer, then take off the warmth and put aside to infuse for no less than half an hour. Take away any pin bones from the fish with tweezers and reduce up all of the fish into roughly 2cm cubes. Mix with the shelled prawns, and put aside.

Whereas the milk for the sauce is infusing, make the mashed potato. Boil the spuds in salted water till tender. Drain and go away them in a colander to steam for a minute or two, then return to the pan and mash with the butter and milk. Season to style with salt & pepper.

Carry a pan of water to the boil, add the eggs and boil for 7 minutes. Take off the warmth, and put the pan beneath chilly operating water to cease the cooking. When the eggs are cool sufficient to deal with, peel them.

Preheat the oven to 200C/400F/fuel mark 6.

To make the béchamel sauce, pressure the infused milk right into a jug and place by the hob. Soften the butter in a pan over medium warmth, add the flour and stir properly to make a easy roux. Cook dinner this gently for a few minutes, stirring, then step by step add the infused milk, beating properly after every addition so you aren't getting any lumps. Enable the sauce to prepare dinner gently for a few minutes, stirring sometimes so it doesn’t stick. Take away from the warmth, season to style and add the parsley and chives. Stir within the fish and the prawns.

Minimize the eggs into quarters and prepare them in a pie dish (about 30 x 20cm). Spoon over the fish combination, then high with spoonfuls of mashed potato, spreading it evenly over the fish and the highest into wavy strains with a fork to maximise crispness. Dot with a little bit butter and bake within the oven for about 25 minutes, till the highest is beginning to brown and the sauce effervescent up the edges of the mash. Serve with buttered peas.
